Recipe: Red Bean Curry

  • 1 Can Red Kydney Beans
  • 6oz Can Coconut Cream
  • 1/2 cup Basmati or Wild Rice
  • 1 cup Broth
  • 2 tbspn Red Curry Paste
  • 1 tbspn Tomato Paste
  • 1 tspn Fish Sauce
  • 2 tspn Brown Sugar
  • Sweet Peppers, Tubers, Onions (optional)

Cook rice in broth. When done, add Kydney Beans, Coconut Cream, Red Curry Paste, Tomato Paste, Fish Sauce and Brown Sugar. Stir and bring to an even warmth. Optionally saute sweet peppers, tubers or onions and add to the mixture.
