Recipe: Cajun Red Bean Rice
Rice
- 1/2 to 2/3 cup Basmati Rice
- 1-2 tspn Apple Cider Vinegar
- Twice as much broth
- Pinch of Sugar
Beans
- 1/2 can Red Kydney Beans
- 1 Onion
- 1/2 Green or Sweet Pepper
- 1 Stalk Celery
- 1 tbspn Butter or Lard
- 2 oz Sausage (optional)
- 1-2 tspn Tomato Paste
- Cajun Seasoning
- Sugar
- Water
- Hot Sauce
Prepare rice in a seperate pot. In a skillet saute vegetables in butter or lard. If using sausage, add and brown. Add kydney beans, tomato paste, cajun seasoning, sugar, and hot sauce. Adjust spice ratios to taste. Add water to keep from getting too dry. Serve over rice.
