Alfredo

Cheesy cream sauce for your pasta.


  • 2 cups pasta or equivalent spaghetti
  • 3 Tbspn butter
  • 3 Tbspn heavy cream or sour cream
  • 3 Tbspn Parmesan powder
  • salt and pepper to taste
  • 1 Tbspn red wine (optional)
  • 1 Tbspn lemon juice (optional)
  • shredded Gorgonzola, Parmesan, mozzarella, or cheddar (optional)
  • oregano, thyme, rosemary, basil, paprika, garlic (optional)
  • pesto sauce (optional)
  • bacon, diced (optional)
  • chicken, diced (optional)
  • mince meat (optional)
  • broccoli, spinach, arugula, mushrooms, sun-dried tomatoes, frozen peas (optional)

The basic recipe is simply butter, cream, and Parmesan in equal portions. Melt the butter in cream. Add salt and pepper to taste. Pour over pasta. Add Parmesan and toss.

All other ingredients are optional based on your mood. Red wine and lemon juice add a nice zest to the sauce. Layer extra cheeses on top. Oregano, thyme, rosemary and garlic in any combination work well. Or an equal portion of pesto sauce. For a more Eastern European flavor combine paprika and mushrooms. Add any combination of meat or steamed/sauteed vegetables on hand.
