Recipe: Bigos Stew

A Polish stew made of pork, kielbasa and kruat.


  • 2 slices Bacon, diced
  • 1 lb. Keilbasa, sliced
  • 1 lb. Pork, cubed
  • 1/4 cup flour
  • 1 Onion, diced
  • 2 Carrots, sliced
  • 16 oz Mushrooms, sliced
  • 4 cups Cabbage, shredded
  • 16 oz Saurkraut
  • 1/4 cup Brandy
  • 1 tspn Garlic
  • 1 tspn Basil
  • 1 tspn Oregano
  • 1 tspn Paprika
  • 1/4 tspn Salt
  • 1/4 tspn Pepper
  • 1/4 tspn Caraway Seed
  • 1 pinch Cayenne Pepper
  • 1 dash Hot Sauce
  • 1 dash Worcestershire Sauce
  • 5 cups Stock
  • 2 Tbspn Tomato Paste
  • 1 Can Diced Tomatoes

In a dutch oven brown bacon and kielbasa. Lightly flour pork and add to pot and brown. Add onion, carrots, mushrooms, cabbage and kraut. Reduce heat to medium and stir for 10 minutes. Deglaze pan with brandy. Add garlic, basil, oregano, paprika, salt, pepper, and ceyenne. Cook for 1 minute. Add hot sauce, worcestershire sauce, stock, tomato paste and tomatoes. Bring to a boil. Bake for 3 hours at 350 degrees.
