Carnitas
Slow cooked seasoned pork, shredded and fried.
- 1 tablespoon fresh garlic, diced
- 16 oz. Green chil, diced
- 1 Onion, sliced
- 2 lbs. Pork loin, 3" cubes
- 1/4 cup Lard
- 1 tablespoon Flour
- 1 tablespoon Cumin
- 1 tablseppoon Oregano
- Salt & Pepper
- 3 tablespoons Lime juice
- 2 cups Chicken broth
In a dutch oven melt lard and fry garlic, onion and green chili. Set aside. Roll pork cubes in flour, cumin, oregano then salt and pepper then fry until evenly browned. Add lime juice and broth until covered. Bake, covered, at 275 degrees for 2 hours and uncovered for 1 hour or until reduced. Drain excess broth and shred carnitas. Layer carnitas thinly on a cast iron skillet and fry until crisp.
