Recipe: Gorditas

Thick, stuffed corn pastries.


  • 1 1/2 cup Maseca
  • 1 tspn Salt
  • 1 cup Water (plus extra)
  • 2 Tbspn Lard
  • Shredded cheese, beans, salsa, and/or prepared meat for filling and topping.

  1. Mix maseca, flour, and salt in a mixing bowl. Add additiona water until the dough is dry and no longer sticky with the consistency of play dough.
  2. Heat lard in a cast iron skillet.
  3. Divide dough into four balls. Take two sheets of plastic wrap, place one beneath and one on top of the ball. Using a glass pan, press down on the ball until it forms a tortilla roughly 9" across.
  4. Fill tortilla with select fillings, fold over to close.
  5. Fry in the lard, two minutes on each side, flipped twice.
