Recipe: Lamb Kofta
Middle eastern lamb meatballs
- 1 lb. Ground Lamb
- 1/3 cup Pine nuts
- 1/2 Yellow Onion
- 1/2 Red Bell Pepper
- 3 Tbspn Parsley
- 2 Tbspn Minced Garlic
- 1/4 tspn Salt and Pepper
- Option 2: Minced Kafta
- 1/4 tspn Allspice
- 1/4 tspn Cinnamon
- 1/2 tspn Cumin
- 1/2 tspn Coriander
- 1/2 tspn Paprika
- Dash Cloves
- Dash Nutmeg
- Option 3: Mint Kafta
- 2 tspn Mint
- 2 tspn Cumin
- 2 tspn Coriander
- 1/2 tspn Paprika
- 1/4 tpsn Cinnamon
Mince the onion, red bell pepper, garlic, and parsley. Mix with pine nuts, lamb, parsley, and choice spices. Form into meatballs. Pan fry.
- Rice: 1 Tbspn olive oil, chicken broth, dash of cinnamon
- Serve with hummus, pita, rice, salad, or tiziki sauce
