Recipe: Lomo Saltado
- 1 lb. Skirt Steak
- 1 large Onion
- 1 large Sweet Pepper
- 1 can Diced Tomatoes
- 1 head Chives
- Potatoes
- Garlic Powder
- Ginger
- Cilantro
- Salt and Pepper
- Soy Sauce
- Apple Cider Vinegar
- Canola Oil
Dice potatoes and place in a well-oiled pan. Bake at 425 degrees until crispy. Cut skirt steak into slices and stir-fry in canola oil. Set aside. Stir-fry diced onion, peppers, tomatoes, and chives in canola oil. Add steak back to the wok. Spice with garlic, ginger, cilantro, salt, pepper, soy sauce, and apple cider vinegar to taste. Serve on bed of potatoes.
